Cognac, sugar and bitters in an absinthe-rinsed glass: aromatic, dry and quietly intense.

Steps

1. 1Chill a rocks glass with ice, then discard the ice and rinse the glass with the absinthe, pouring out any excess.
2. 2In a mixing glass crush the sugar cube with the bitters, add the cognac and ice.
3. 3Stir until well chilled.
4. 4Strain into the absinthe-rinsed glass (no ice).
5. 5Garnish with a lemon zest.
