Cognac, lemon and demerara syrup under boiling water: smooth, tart and rounded by warm caramel.

1. 1Warm a heatproof glass with hot water, then empty it.
2. 2Add the cognac, lemon juice and syrup and stir.
3. 3Top with boiling water while the spoon is still in the glass and stir briefly.
4. 4Express a zest twist over the drink and use as garnish.
